Tempering or Defrost
Purpose Built Dawson Units for Controlled Defrost Applications. State-of-the-art data loggers are included which provide traceability and added quality control.
Having made sure that your product is blast frozen properly and quickly, it is vital that the defrosting is equally controlled to avoid any risks of bacteria and for better yields on slicing or cutting.
Our defrost units are designed to safely raise product temperatures to the required level, and to hold the product at that temperature until required.
The desired results are achieved by the careful positioning of probes, which monitor product skin and core temperature, and automatically regulate the air temperature accordingly.
Defrost units feature state-of-the art data logging, which monitors both the air temperature and the product temperature every two minutes. The information collected can be printed at the data logger in either a graphical or data format. Alternatively, the information can be downloaded to a computer and graphed to provide accurate records throughout the defrost process.
Close temperature control to within 0.1°c can be achieved. The unit has different digital thermostats, one for each phase of defrost, to ensure that the product is evenly defrosted whilst eliminating microbiological growth.
